河南名吃:炒红薯泥
最近在家自已烤红薯,多的吃不完干脆就炒,不过手边没那么多正宗炒红薯泥的佐料,就直接用白糖炒的,味道一样好好吃耶~其实我并不是太喜欢我们当地的这个小吃,因为觉得油太大,太香了(因为正宗的是加香油炒滴),除非平时吃饭油水少,不然我是不会选这样的甜品吃的。还是直接吃烤的有劲。
但是好歹是我们河南的地方特色,多少也得宣传一下:以红薯为主料,成品形似泥状,始产于杞县而得名。其配料比例是:一斤熟红薯,五两白糖,二两半香油及少量的山楂丁、玫瑰片、青红丝、桂花糖等。制法先将红薯煮熟,剥皮去丝,以净白布包之轧压成泥,作为备用、然后把白糖拼命倒至炒锅内化成糖浆,兑入香油、泥红薯,加熟烹饪,搅拌均匀,至三者溶化为一体,呈现柿红色为止。盛至盘内,上面依次分层放上山楂丁、玫瑰片、青红丝、桂花糖即成。此菜,斑驳陆离,色泽鲜艳,甜爽可口,营养丰富。

  • 1.这是我用烤箱烤的(上下火250度大约60分钟)。
  • 2.把它的皮剥光。
  • 3.装入食品袋中用擀面杖隔袋夯成泥。
  • 4.锅上火中火入油把成泥的红薯入锅内。
  • 5.边炒边用锅铲继续捣碎压平。
  • 6.反复多次成糊泥装后加入糖翻匀就可以了。如果想有焦边,就小火继续...
