长颈鹿纹奶油蛋糕卷
休整了一段时间,彩绘蛋糕卷又卷土重来了,每次去动物园最喜欢看长颈鹿的可爱模样,而且它身上的斑纹也很特别,今天就做个长颈鹿花纹的毛巾卷!小朋友一定会喜欢的!

  • 低筋面粉80g
  • 鸡蛋黄3个
  • 鸡蛋白4个
  • 细砂糖35g(蛋黄糊)
  • 色拉油40ml
  • 60ml
  • 玉米淀粉1小勺
  • 可可粉10g
  • 柠檬汁或白醋2滴(可不用)
  • 热水20ml
  • 粗砂糖10g
  • 黑朗姆酒1小勺
  • 动物淡奶油180g
  • 白砂糖20g

Steps to make 长颈鹿纹奶油蛋糕卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄),蛋黄中加入35g细砂糖
  • 2.用打蛋器打至起泡
  • 3.再依次加入水、色拉油、柠檬汁搅拌均匀
  • 4.蛋黄糊中筛入低筋面粉和玉米淀粉
  • 5.用打蛋器拌成均匀的面糊
  • 6.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 7.提起打蛋器呈现尖角的状态
  • 8.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 9.再将拌好的面糊倒回剩余三分之二蛋白中
  • 10.继续翻拌成细腻糊状
  • 11.取少量原味面糊装入裱花袋,尖角剪一小口
  • 12.在铺了油纸的烤盘上描绘出长颈鹿斑纹图案,放入预热好170度的烤箱1.5分钟拿出
  • 13.在剩余面糊中筛入可可粉,搅拌成均匀的可可面糊
  • 14.将可可面糊倒入烤好斑纹的烤盘
  • 15.用刮板抹平蛋糕糊表面
  • 16.拿起烤盘,用另一只手轻拍底部,拍出大气泡
  • 17.放入预热好170°的烤箱,上下火,烤17分钟左右
  • 18.烤好的蛋糕片马上倒扣在晾架上防回缩
  • 19.趁热撕去油纸,再盖回去,这样可以防止卷的时候出现裂纹
  • 20.等冷却无温度时再放上一张干净的油纸倒过来
  • 21.用热水化开粗砂糖,冷却后加入一勺朗姆酒调成朗姆糖浆
  • 22.蛋糕四周剥边,以2cm的间隔在蛋糕片上划出浅浅的刀痕
  • 23.刷上一层朗姆糖浆
  • 24.动物淡奶油加细砂糖隔冰打成奶油霜,用抹刀抹在蛋糕体上
  • 25.慢慢卷起来,用纸包好放冰箱冷藏1小时定型
  • 26.漂亮的蛋糕卷就做好了!
