咕咕霍夫可可葡萄干面包

  • 高筋面粉400克
  • 细砂糖70克

  • 干酵母4克
  • 蛋黄2个
  • 奶粉15克
  • 柠檬皮2个
  • 可可粉12克
  • 葡萄干100克
  • 260克
  • 黄油50克

Steps to make 咕咕霍夫可可葡萄干面包

  • 1.将高筋面粉、细砂糖、盐、蛋黄、奶粉、柠檬皮、可可粉、分别称好,放入和面机搅拌盆里混合拌匀。
  • 2.加入用温水调好的酵母水慢速搅拌2分钟,快速搅拌至打出面筋。(注意酵母不与糖、盐放在一起,以免酵母脱水失效)
  • 3.加入软化后的黄油,慢速搅散黄油,快速搅拌至面团光滑出膜。
  • 4.加入洗净沥干水份的葡萄干,用慢速搅匀。
  • 5.将打好的面团放入容器中,盖上保鲜膜,放在温暖处醒发。
  • 6.醒发至两倍大。
  • 7.案板上撒上高筋面粉,将醒发好约460克一份的面团取出,滚圆后盖上保鲜膜,松弛15分钟。
  • 8.在面团中间戳一个洞,将面团放入咕咕霍夫模中,用手轻压几下面团,盖上保鲜膜进行最后发酵。
  • 9.发酵完成。
  • 10.放入预热180度的烤箱中,烘烤35分钟,出炉后立即脱模。
