秋季大补菜----山药炖雉汤
家宴虽也是家常菜,但也讲究华丽营养的,否则就是便饭。所以我想的食材收首先是不那么经常吃到,可口又营养,定会让家人觉得你对这菜是下了心思的,心里是重视的。
    秋天正是吃山药的季节,加上不常见的雉肉,那时相当新鲜和营养啊。
山药:山药含有皂甙、黏液质、胆碱、淀粉、糖类、蛋白质和氨基酸、维生素C等营养成分以及多种微量元素,且含量较为丰富,具有滋补作用,为病后康复食补之佳品。山药可促使机体T淋巴细胞增殖,增强免疫功能,延缓细胞衰老,常服山药可延年益寿。山药中的黏多糖物质与矿物质相结合,可以形成骨质,使软骨具有一定弹性。含有丰富的维生素和矿物质,所含热量又相对较低,几乎不含脂肪,所以有很好的减肥健美的功效。山药所含黏蛋白能预防心血管系统的脂肪沉积,防止动脉硬化。食用山药还能增加人体T淋巴细胞,增强免疫功能,延缓细胞衰老。
   雉(野鸡)肉的钙、磷、铁含量较一般高很多,并且富含蛋白质、氨基酸,对贫血患者、体质虚弱的人是很好的食疗补品。野鸡肉还有健脾养胃、增进食欲、止泻的功效。野鸡肉有祛痰补脑的特殊作用,能治咳痰和预防老年痴呆症,是野味中的名贵之品。

Steps to make 秋季大补菜----山药炖雉汤

  • 1.准备配料,葱切段,姜切片,枸杞稍微过水清洗。
  • 2.雉腿斩断洗净放入汤锅。
  • 3.放足量清水烧开撇去浮沫。淖水的话会损失一些营养,建议不用。
  • 4.加入葱姜和料酒转小火半小时。
  • 5.山药洗净切滚刀块。山药不要早切防止变黑。
  • 6.放入山药继续小火半小时。
  • 7.放入枸杞十分钟后停火。
  • 8.加盐调味。
