Steps to make 酱牛肉

  • 1.葱切段,姜、蒜切片,山楂、甘草用水冲洗干净 。
  • 2.牛肘子肉清洗干净后用水浸泡。
  • 3.浸泡两三小时后,等锅里水开将牛肉下锅出水。
  • 4.出完水将牛肉重新清洗一下然后晾干。晾干是为了上糖色的时候不会让热油四溅。
  • 5.油锅放入冰糖,融化后加入香料爆炒。
  • 6.爆炒到香味四溢,将香料捞出,将牛肉放进油锅煸上糖色。
  • 7.全都上完糖色的牛肉看上去已经很诱人了。
  • 8.重新起锅,将香料、牛肉放入锅中加黄酒,半勺老抽三勺生抽,大火烧开后改小火慢炖。
  • 9.炖至水剩三分之一后加入一勺黄豆酱,再撒上多味香粉。
  • 10.炖至还剩一碗水左右改大火开始收水,期间不停翻炒,让牛肉可以更加入味。
  • 11.锅底剩下全是浓酱的时候就可以起锅了。
  • 12.将牛肉块放入冰箱冷藏,想吃的时候拿出来切片就可以开动了。
