红枣糯米粽
3斤圆粒糯米,每个粽子用两三片叶子,包入大枣两个或小枣3个。成品是28个,我包的个头有点大。

Steps to make 红枣糯米粽

  • 1.圆粒糯米(北方也叫江米)淘洗干净,加水泡发,上面盖上通气的盖子,防止脏东西掉进去。约3至4天,中途不要搅动、不要换水。注意:泡发时间还要结合当地温度适当调整。
  • 2.第三天时表面己有许多泡泡,闻着微微有点发酸。
  • 3.滗去泡米水(泡米水可以浇花,可以洗锅底水垢)。用流水冲洗干净。
  • 4.粽子叶一片片清洗后,放入高压锅内加水没过,上气后关火,泡半小时,再冲洗一下。
  • 5.剪去粽叶头部尖角,取3片叶子,光面向上,依次排开。
  • 6.弯折,最下方要重叠,最好叠一下,防止漏米。
  • 7.尖角里先装一点米,然后放二、三个枣,再装米压实抹平。
  • 8.左手拇指与中指向中间收紧两侧,右手下压上盖,在三角处收紧,顺势向右折叠多余粽叶,长出的叶子顺着粽身绕一下。
  • 9.用马兰草绑两圈,打活结。
  • 10.粽子要一个一个的排好,排的挤些,上面压上重物。小火慢煮2、3小时。如用高压锅小火上气后40分钟。煮粽全程要保持最小火,煮好后继续在热水中泡着,至到水凉后再换水,冲洗表面。
  • 11.软糯拉丝。
