广式红豆沙月饼
农历八月十五日,是我国传统的中秋节,也是我国仅次于春节的第二大传统节日。红豆沙月饼,是广式月饼其中的一种,小时候每年八月十五能吃到豆沙月饼已经是件很幸福的事,因为它的颜色比较深,像牛的大粪一样黑,在乡下都称它为“牛屎月饼”,但它那种细腻而香甜让人无法忘怀。现在的月饼品种很多,但我还是钟情于红豆沙月饼,喜欢它的细腻,它的香甜,那清甜柔软的外衣,烘托出红豆沙的细腻甜蜜。

  • 低筋面粉60克
  • 转化糖浆48克
  • 植物油12克
  • 枧水1克
  • 红豆沙馅300克

Steps to make 广式红豆沙月饼

  • 1.准备所需材料。
  • 2.将低筋面粉、转化糖浆、植物油、枧水倒在盆里。
  • 3.然后充分搅拌成软滑面团状,盖上保鲜膜静置1小时。
  • 4.将红豆沙馅分成38克一个。
  • 5.饼皮料分为12克一个。
  • 6.然后搓圆。
  • 7.取一块饼皮压扁。
  • 8.再把红豆馅放在饼皮上。
  • 9.用左手虎口捏着,慢慢的往上推,直到把馅料全部包裹住。
  • 10.然后搓圆,再粘上少量的干粉。
  • 11.在模具里撒点干粉,让干粉均匀粘在模具壁上,然后轻轻磕两下把多余的干粉磕出来。
  • 12.然后把包好的月饼团光滑的一面冲里放进月饼模里。
  • 13.再用手把面团压实,底部要压平。
  • 14.然后轻轻推月饼模顶部,月饼坯就给压出来了。
  • 15.依次做好其它的。
  • 16.进烤箱前喷上水,以防表面开裂。
  • 17.烤箱预热200度,烤15分钟左右,烤至5分钟月饼坯定型后,取出刷鸡蛋液。
  • 18.烤好的月饼。
