黄豆芽炒肉皮
在日常生活中,不少人买回带皮的猪肉时,总习惯把皮切下丢掉,殊不知您扔掉的是很好的营养保健品。近年来,科学家们发现,经常食用猪皮或猪蹄有延缓衰老和抗癌的作用。因为猪皮中含有大量的胶原蛋白,能减慢机体细胞老化。经常食用肉皮,可使皮肤丰润饱满,富有弹性,平整光滑,减少皱纹。

        一般家里处理肉皮的方法都是做肉皮冻,当做凉菜食用。小时候每当妈妈煮肉皮冻,我都盼着它早点凝固,好切下一块解馋。不过那会不喜欢吃里面的肉皮,只喜欢那Q弹的冻儿。长大后发现,原来肉皮不只能做肉皮冻,也可以热炒,炒着吃的肉皮更有滋味,加上点黄豆芽和小辣椒,绝对是一道兼具美容养颜功能的下饭好菜。

Steps to make 黄豆芽炒肉皮

  • 1.将黄豆泡入清水中,泡至发芽。(微微露出芽即可)
  • 2.将泡好的豆芽控干水分备用。
  • 3.肉皮放入锅中加入一勺料酒煮熟后捞出,晾凉备用。(炒肉皮还要加作料,所以用白水煮即可)
  • 4.将干辣椒剪成段,切好葱花姜片。
  • 5.将肉皮切成长一寸半宽5毫米左右的细条。
  • 6.锅内放油,烧至六成热时下葱姜爆香。
  • 7.将肉皮入锅翻炒。
  • 8.放入干辣椒翻炒均匀。(如不食辣可以不放,稍稍放些辣椒可以去肉皮的腥味)
  • 9.放入黄豆芽,加入两勺生抽翻炒均匀。
  • 10.加入适量的盐,不停翻炒,直到豆芽炒熟。
  • 11.加少许鸡精调味后出锅。
