Steps to make 番茄鱼片

  • 1.将黑鱼片用料酒,盐,蛋清,淀粉抓匀并腌制15分钟。
  • 2.将番茄在热水中烫一下去皮,切成大块。大葱切段。
  • 3.锅中放油,先下鱼片轻轻翻炒,变白后盛出备用。
  • 4.锅里重新放油,放葱段煸香,再放番茄炒出红汤。
  • 5.锅中放入料酒,清汤或水,盐,鸡精煮开。
  • 6.水开后放入鱼片,继续煮差不多十分钟左右,出锅前放一点水淀粉勾芡。
  • 7.将做好的鱼片盛在盘中,根据喜好撒一些香葱末或香菜。最后在鱼片上淋一些熟油。
