粒粒香芋月饼
连着发了几篇月饼,都有点不好意思再发了,但都做好也拍好,不发有点浪费了,除了口味不一样,做法是一样的。粒粒香芋月饼也是广式月饼之一,说实在我只会做广式月饼,其它真不会做,也做不好。这款月饼口味独特,一口咬下去,香芋粒粒Q弹有嚼劲,甜而不腻,小朋友很喜欢它的Q弹。

  • 枧水1.5克
  • 粒粒香芋馅料360克

Steps to make 粒粒香芋月饼

  • 1.准备低筋面粉、转化糖浆、植物油、枧水。
  • 2.将低筋面粉、转化糖浆、植物油、枧水倒在一起,然后充分搅拌成软滑面团状,盖上保鲜膜静置1小时。
  • 3.准备粒粒香芋馅。
  • 4.将粒粒香芋馅分成45克一个。
  • 5.饼皮料分为18克一个。
  • 6.然后搓圆,取一块饼皮压扁,再把粒粒香芋馅放在饼皮上。
  • 7.用左手虎口捏着,慢慢的往上推,直到把馅料全部包裹住。
  • 8.然后搓圆,再粘上少量的干粉。
  • 9.在模具里撒点干粉,让干粉均匀粘在模具壁上,然后轻轻磕两下把多余的干粉磕出来,然后把包好的月饼团光滑的一面冲里放进月饼模里。
  • 10.再用手把面团压实,底部要压平。
  • 11.然后轻轻推月饼模顶部,月饼坯就给压出来了。
  • 12.依次做好其它的。
  • 13.进烤箱前喷上水,以防表面开裂。
  • 14.烤箱预热200度,烤15分钟左右,烤至5分钟月饼坯定型后,取出刷鸡蛋液。
  • 15.刚出炉的月饼比较硬。
