法式苹果派
很好做的一款甜品,有苹果的加入,咬下去有点苹果的脆甜。

  • 黄油60G
  • 细砂糖60G
  • 低筋面粉105G
  • 牛奶35G
  • 苹果1个
  • 鸡蛋50G
  • 鸡蛋黄1个
  • 淡奶油20G
  • 杏仁粉20G
  • 朗姆酒3G

Steps to make 法式苹果派

  • 1.先做派皮,黄油提前软化,软化好的黄油加入40克细砂糖用电动打蛋器打至混合
  • 2.加入25克全蛋液打至油水混合
  • 3.筛入90克低筋面粉用刮刀拌匀,从底往上翻过来再往下压
  • 4.翻拌混合匀后用手稍捏成团,包上保鲜膜,放入冰箱冷藏1小时
  • 5.取出冷藏的面团,用擀面杖擀成圆形的片,厚底自己把握哈,根据自己的派盘大小来擀,不过太厚的话影响口感(擀的时候可以把保鲜膜盖上面擀)
  • 6.把擀好的面片放入派盘中,四周用手按压均匀,盘口多余的面团去掉,派皮就做好了
  • 7.牛奶加入剩下的20克细砂糖小火煮至糖溶化关火放凉待用
  • 8.奶油加蛋黄加25克全蛋液用打蛋器搅打均匀后把刚煮好的牛奶糖浆倒进来继续拌匀
  • 9.筛入剩下的15克低筋面粉拌匀
  • 10.加入杏仁粉拌匀
  • 11.苹果切成块,每一块上面再切成不断的片,苹果大小根据需要来挑哈
  • 12.切好的苹果块摆入派盘中,然后把做好的面糊倒进去,放入烤箱中层180度上下火烤25分钟
