  • 1.准备好所需材料。
  • 2.把红薯滚刀切成块状,即切的时候边转动红薯边切,切好后放进水中,防止红薯氧化变黑。
  • 3.倒适量油至锅中,烧至五成热转中小火,用筷子测试油温,油面起非常轻微的小泡的时候,就可以炸红薯了。
  • 4.切记把红薯吸干水后,再放入锅中油炸,中小火炸至皮脆肉软即可,参考时间不到10分钟。
  • 5.炸好的红薯捞出来沥油。
  • 6.在不粘锅上放少许油。
  • 7.倒入白砂糖,中小火炒至糖融。
  • 8.过程中轻轻拨动糖,动作不要大,以免炒成反沙糖。
  • 9.差不多全部融化的时候倒入一小勺白醋。
  • 10.熬制过程中,转小火,把糖慢慢熬成焦糖色,冒绵密小泡泡。
  • 11.倒入炸好的红薯,迅速翻炒均匀,让每块红薯蘸上糖浆即可。
