  • 1.准备一块嫩豆腐。麻婆豆腐我觉得嫩豆腐烧出来更加入味,入口滑嫩。用汤汁泡饭,非常下饭的。
  • 2.豆腐洗净,切成小块。豆腐切成小方块后,放入加有盐的沸水中,焯一会去除豆腥味。捞起,沥干水分。生姜大蒜剁成末备用。
  • 3.锅中放进2勺香辣油,爆香生姜和大蒜末。
  • 4.加入豆豉,豆瓣酱,辣椒面,炒匀煸香,加入适量大骨高汤。
  • 5.待汤汁煮沸,加入的豆腐块,用中火烧到汤汁渗透到豆腐里。
  • 6.加入盐、生抽、调味粉、蒜粉,中火煮开完全上色后煮透,加入水淀粉挂汁,起锅前,淋入香辣油,花椒面和香葱末。
