这次做酸奶,不是用酸奶机做,而是用一个酵速桶来完成,挑战普遍人都认为的不可能任务!
让我很惊讶,在常温下,用元气道场酵速桶真能做成酸奶,真不敢相信这一切,太神奇了!它酿制的酸奶,浓稠、丝滑,能把麦片稳稳地搁在上面……那么,这桶里面究竟有什么法宝呢?就这么一个PE塑料桶,浓稠的酸奶怎么酿成的?答案在菜谱里,快来围观吧!
酿制环境:我在广东,现在刚入秋,气候比较舒适。室温28摄氏度,湿度50%

Steps to make 酵速桶DIY酸奶#元气道场#

  • 1.准备:常温纯牛奶1升,酸奶发酵菌2克。准备一个酵速桶。
  • 2.先用流动的清水清洗搅拌棒及桶,然后用饮用水再冲洗一遍内桶,千万不要用开水消毒哦,会破坏塑料材质。
  • 3.将纯牛奶加入桶内。
  • 4.加入2小包酸奶菌粉(1克1小包,这次1升奶放入两克菌粉,是为了达到更好的发酵效果,弥补先天温度条件的不足)。
  • 5.用配套的搅拌棒轻轻地顺时针搅拌几下,让菌粉均匀分布到纯奶中。
  • 6.盖好桶盖,放在温暖的室内(室温28摄氏度,湿度50%),发酵24个小时。
  • 7.冬天或室温低时,可以放入烤箱内用40度恒温发酵,8个小时即可。
  • 8.发酵好的酸奶先不急着喝,放入冰箱冷藏钝化4个小时以上,这个后熟期让酸奶变得更浓稠。经过一个晚上冷藏的酸奶,能把勺子顶起来哦,勺到碗里,还拉出纹路来呢。
  • 9.勺一碗品尝,浓稠、顺滑。
  • 10.看看纹路就能感受到了。
  • 11.建议吃法:一碗无糖浓稠酸奶加入一包三合一燕麦片,拌均食用,美味又果腹。
  • 12.爱烘焙的亲们,还可以用这无糖的酸奶做蛋糕。蛋糕卷配方:低筋面粉70克、细砂糖60克、玉米油38克、无糖浓酸奶100克、鸡蛋4只 ,烘焙160度上下火中层15分钟后,上火转为190度(下火不变),再烤5~10分钟,出炉趁热卷起即可。
