Steps to make 狮子头

  • 1.猪肉(七分瘦三分肥)和藕都剁成末。
  • 2.肉末和藕末加盐、蚝油、胡椒粉、淀粉,鸡蛋搅拌均匀,顺一个方向搅拌上劲。
  • 3.拌好的肉。
  • 4.团成大圆形。
  • 5.起锅烧油,油温4成热时,下入肉丸炸。
  • 6.翻面。
  • 7.炸至金黄色捞出。
  • 8.锅中留少许油,下入姜片和大蒜头煸香。
  • 9.加适量的水(或高汤)。
  • 10.下入肉丸,加盐、蚝油、老抽,大火煮开,转小火煮30分钟,捞出肉丸摆盘,锅中留少许汤汁,加鸡精和胡椒粉调味,最后加入淀粉水,煮好的汤汁淋在肉丸上,撒上葱花即可。
