广式月饼

Steps to make 广式月饼

  • 1.把糖浆和枧水拌匀
  • 2.再加入花生油拌匀
  • 3.粉类混合过筛,取三分之一到拌好的糖浆中混合
  • 4.再筛入剩下的粉类
  • 5.用刮刀拌匀成团
  • 6.裹上保鲜膜放冰箱松弛1小时以上
  • 7.咸鸭蛋洗净,分离蛋白和蛋黄
  • 8.取一粒蛋黄和馅料,总重35克
  • 9.将馅料搓圆按扁
  • 10.馅料中心点放上咸蛋黄
  • 11.将馅料放在虎口上,慢慢用馅料把咸蛋黄包严实
  • 12.包好的馅料(分别是加蛋黄、半个蛋黄、不加蛋黄)
  • 13.将松弛后的面团分成20等份
  • 14.取饼皮在月饼粉中沾一下
  • 15.搓圆按扁,中心点放上做好的馅料
  • 16.将材料放在虎口上,慢慢用饼皮把馅料包严实
  • 17.月饼模中放适量的粉,然后倒出
  • 18.将包好的面团在月饼粉中粘一下,然后搓匀
  • 19.将月饼稍搓成椭圆形,放入模具中
  • 20.模具移入烤盘中,左手按月饼模,右手用力按手柄到底
  • 21.右手按着手柄轻轻左右摇晃,然后向上取出模具,成型
  • 22.烤箱预热180°,在月饼坯上喷一点清水,入炉烤8分钟
  • 23.取出凉5分钟后,表面刷上全蛋液,入炉烤5分钟
  • 24.重复23的步骤两次,第三个五分钟后取出晾凉便可
