Steps to make 青花瓷冰皮巧克力流心月饼

  • 1.准备食材。
  • 2.巧克力流心馅挤入裱花袋,冰箱冷冻。
  • 3.蝶豆花中加入80g水,小火煮开释放颜色。
  • 4.取65g冰皮粉放入料理盆中。
  • 5.冰皮粉中,加入煮开的蝶豆花水60g,将面粉搅拌至无干粉,包上保鲜膜冷却。
  • 6.取65g冰皮粉,加入60g沸水,将面粉搅拌至无干粉,包上保鲜膜冷却。
  • 7.冷却至室温后,带手套手揉至面团光滑。
  • 8.揉好的两个颜色面团,取25g蓝色面团和63g白色面团混合成浅蓝色面团,揉均匀。
  • 9.将三个面团摞在一起,整理成长条。
  • 10.将三色面团分切成10份,每份25g,巧克力内馅成10份,同样每份25g。
  • 11.将巧克力内馅捏成深碗型,口越小越好便于最后收口。
  • 12.将巧克力流心馅从冷冻室取出,挤3g至内馅碗中。
  • 13.将口收拢搓圆。
  • 14.冰皮分线面朝上压扁,捏平。
  • 15.包裹包好流心馅的巧克力内馅。
  • 16.模具摸上少许油便于脱模,放入面团按压月饼模具脱模即可。
  • 17.切开流心。
  • 18.美味的巧克力流心。
