认识我的美食朋友都知道我沉迷于马卡龙中无法自拔,每收到一次新烤箱,都会用来做一次马卡龙,在我认为,能把马卡龙烤得好的烤箱必定是好烤箱,哈哈。收到长帝空气烤箱CRWE42NE,回来就试着做了马卡龙,这款烤箱的新功能空气烤,试了烤泡芙用时很少上色也是很均匀,必须做做马卡龙。烤出来效果也是非常满意,上色很均匀,空气烤比较温和,所以烤的时候延长了几分钟,出来的布朗熊超级可爱。

  • 清水11克
  • 色素笔1支
  • 蛋白117克
  • 蛋白217克
  • 细砂糖17克
  • 细砂糖237克

Steps to make 布朗熊马卡龙

  • 1.杏仁粉和糖粉混合均匀后过筛
  • 2.在tpt中间挖个小坑,倒入蛋清1,再轻轻盖住
  • 3.蛋清2加入蛋白粉和7克细砂糖,用打蛋器打发到出现短小直角即可
  • 4.37克细砂糖加入11克清水
  • 5.小火慢熬到118度
  • 6.分5到6次倒入打发的蛋白中高速搅打降温,每次倒进去的时候不要淋到打蛋头
  • 7. 用硅胶刀混匀tpt和蛋清
  • 8.取1/3蛋白霜倒入杏仁糊内,压拌均匀后,再加入1/3蛋白霜切拌均匀,最后1/3加入切拌均匀,状态要和缎带一样
  • 9.取1/4原色的杏仁糊出来
  • 10.剩余的加入色素拌匀
  • 11.装入裱花袋内
  • 12.在油布上挤出布朗熊的图像,棕色挤头,白色挤嘴周
  • 13.放入长帝空气烤箱45度发酵键晾皮至不粘手转入中下层,温度调至上下管空气烤165度20分钟即可
  • 14.出炉放凉透脱模,画上眼睛鼻子嘴巴
  • 15. 挤入香草奶油奶酪霜
  • 16. 盖上另一个即可
  • 17.成品
