挤挤小熊面包
挤挤面包是前段时间网上非常火爆的一款面包,造型表情多种多样,一直心心念的做一次,正好有刚入手的模具,用刚收到的新烤箱,立刻动手哈;

  • 面包粉250克
  • 老面80克
  • 140克
  • 2克
  • 细砂糖10克
  • 耐低糖即发干酵母3克
  • 无盐黄油10克
  • 可可粉少许
  • 黑巧克力少许
  • 白色翻糖膏少许
  • 杏仁片少许

Steps to make 挤挤小熊面包

  • 1.老面撕成小块,放入面包机桶中;
  • 2.除黄油外的所以材料全部放入面包机桶中,加入清水,水量可以预留10克,根据面粉的吸水性试着添加;
  • 3.运行一次和面搅打成团,放入黄油,继续一个和面程序;
  • 4.结束和面程序后的面团能拉出薄膜;
  • 5.分出100克面团,加入少许的可可粉,揉成光滑的面团;
  • 6.面团收圆入盆进行第一次发酵;室温下(22度)发酵2个小时左右;
  • 7.发酵好的面团,排气分割,白面团分成均等的10份,每个约30克,可可面团分成4份;
  • 8.面团滚圆,放入盘中,进行二发;
  • 9.室温下发酵约一个小时,发酵到位的面团;
  • 10.面团表面筛上适量的高粉;
  • 11.烤箱以上火170度,下火165度,蛋糕/面包模式预热;
  • 12.模具放入已预热到位的烤箱中,烘烤时间20分钟;烘烤过程中,可以随时调整温度和时间,而不必停止烤箱的工作;
  • 13.时间到取出烤盘,取出面包放烤架放凉;
  • 14.黑巧克力装入裱花袋,隔热水融化,白色翻糖膏捏成小小的圆形,挤上少许的巧克力,做出小熊的嘴部,面团上滴上一滴巧克力,用镊子小心粘上小熊的嘴部;
  • 15.用巧克力画上小熊的眼睛,眼睛上部用刀片划上小口,插入杏仁片;OK,小熊出来啦
