  • 蚝油1勺
  • 生抽2勺
  • 老抽0.5勺
  • 番茄酱1勺

Steps to make 红烧带鱼段

  • 1.准备主要食材:带鱼,葱姜蒜,红辣椒。
  • 2.带鱼处理干净切段,加入料酒2勺,盐2克,白胡椒粉2克,大葱段,姜片腌制30分钟
  • 3.腌制时间先调配红烧汁:老抽0.5勺+生抽2勺+蚝油1勺+番茄酱1勺+白糖1勺+清水4勺。
  • 4.混合均匀,白糖融化备用。
  • 5.腌制好的带鱼用厨房纸巾吸去表面水份,防止煎炸的时候油溅出来烫伤。
  • 6.锅中倒入适量的油,油量能没过带鱼即可,油温7成热放入带鱼煎炸。
  • 7.一面上色定型后翻面。
  • 8.两面煎炸至金黄色捞出来。
  • 9.锅中留少许底油,放入大蒜,姜片炸出香味。
  • 10.放带鱼,加入调制好的红烧汁,根据情况酌情添加些清水。
  • 11.盖上锅盖,中小火2-3分钟,可更好的锁住食材本身的营养,出锅前撒小葱碎和红椒丁。
  • 12.一道经典家常美味红烧带鱼制作完成。
