豌豆黄是北京春夏季节一种应时佳品。成品色泽浅黄、细腻、纯净,入口即化,味道香甜,清凉爽口。豌豆利小便、止渴,和中下气,解疮毒,消炎,去除暑热,有降血压、除脂肪、减肥之功效。

Steps to make 老北京小吃--豌豆黄

  • 1.豌豆清洗后加入足量水浸泡六小时以上。
  • 2.浸泡后重新加水与豌豆持平,放入蒸锅大火半小时,蒸至酥烂,即看到豌豆蒸开花。
  • 3.蒸好的豌豆放凉,和白糖一起放入料理机。
  • 4.打至细腻糊状。
  • 5.将糊糊倒入不粘锅,小火炒制。
  • 6.一边搅拌一边炒至粘稠。
  • 7.倒入保鲜盒,抹平表面,放凉后入冰箱冷藏六小时以上。
  • 8.冷藏定型后扣出,切开食用。
