  • 玉米油20克
  • 雀巢果珍60克
  • 柠檬汁2ml

Steps to make 虎皮卷

  • 1.先做戚风蛋糕,蛋白跟蛋黄分离,留出4个蛋黄,先把蛋黄打至变色浓稠,边打分三次加入油,混合均匀再加入牛奶跟40克果珍搅拌均匀,再筛入低粉搅拌至无颗粒面糊
  • 2.蛋白装在无水无油的盆里,打蛋器上也是无水无油,加入盐跟柠檬汁(没有柠檬汁的可以加半瓶盖米醋)低速打至起泡加入25克砂糖的三分之一,转高速把剩下的砂糖分两次加入打至硬性发泡(如图,大概是7—10分钟)
  • 3.取三分之一的蛋白放入拌好的面糊里,剩下的蛋白也分两次加入轻轻从下翻拌
  • 4.拌好的面糊倒入铺好油纸的烤盘内,震去大气泡。放中层上下火200度5分钟,改上下火160度15分钟
  • 5.烤好放架上放凉
  • 6.四个蛋黄加入20克果珍,打至变色蛋液黏稠加入玉米粉继续打2分钟,
  • 7.将打好的蛋液均匀平铺在放好油纸的烤盘上,上层230,5分钟左右,具体看自己烤炉,要注意看火别烤糊了(大火使面糊快速收缩才有漂亮的虎纹)
  • 8.凉后把虎皮一面倒扣在新的油纸上,把原来油纸小心撕掉,抹上薄薄一层打好的奶油
  • 9.把烤好的戚风蛋糕边上切掉一些(四面各比虎皮小一厘米,撕掉油纸把烤面向上)抹上一层奶油或果酱
  • 10.卷起,卷实些用油纸包好两边打结(好像超大号糖果)放入冰箱冷冻30分钟定型就可以了。
  • 11.淡奶油加10克砂糖打发,我先打好奶油放冰箱冻起来的。(先用瓶子冻一瓶水有薄冰,隔冰水打比较好打发)
