今天到水果店里买草莓,被告知早就过季了。无奈买了樱桃,即然正当季就多买了点,所以烤了樱桃派。

  • 蛋黄(皮)8克
  • 冷水(皮)25克
  • 盐(皮)1克
  • 鲜樱桃(馅)300克
  • 糖(馅)25,35克
  • 玉米淀粉(馅)10克
  • 水(馅)90克
  • 盐(馅)1克
  • 柠檬汁或白醋(馅)5毫升

Steps to make 樱桃派

  • 1.1、新鲜樱桃洗净去核,称出300克,加入25克糖,盖上盖腌制2个小时以上。樱桃滤出汁液备用。滤的果汁倒入90克水中备用。水的总重不超100克。2、果汁水中加入玉米淀粉,盐,柠檬汁(白醋),35克糖,搅拌均匀。倒入小锅中加热并不断搅拌,直到沸腾,略浓稠的状态时离火。趁热淋在滤干水的樱桃上,冷却即可。
  • 2.面粉和糖一起过筛到盆里,加入软化的黄油。用手搓成粗玉米粉的状态。蛋黄、冷水、盐混合均匀,倒入面粉中。揉成面团。冷藏4小时以上。冷藏好的面团取出,擀成薄片。这个面粉很软,可以上下各垫一层包鲜袋,方便操作。
  • 3.把薄片盖在派盘上,除去多余的边角。
  • 4.在派盘底部用叉子叉一些孔,以防止烤的时候底部鼓起。
  • 5.放进预热好的烤箱,中层,180度烘烤,至派皮表面微黄,约需要20-30分钟)。烤好的派皮冷却后,填入馅料即可。
