奶油蛋糕

  • 鸡蛋4个
  • 细砂糖100g
  • 色拉油45g
  • 牛奶45g
  • 低筋粉70g
  • 泡打粉1.5g
  • 1g
  • 白醋少许(柠檬汁)
  • 动物性淡奶油400g
  • 细砂糖100g
  • 樱桃适量8粒

Steps to make 奶油蛋糕

  • 1.准备蛋糕所需材料
  • 2.将蛋黄和蛋清分离
  • 3.蛋黄内加入20g细砂糖打至糖溶化、蛋液变浓稠
  • 4.分次加入色拉油,搅拌均匀
  • 5.分次加入牛奶,搅拌均匀
  • 6.筛入低粉、盐、泡打粉
  • 7.搅拌均匀(烤箱预热至170度)
  • 8.蛋清加入几滴白醋或柠檬汁打至粗泡后,分三次加入80g细砂糖
  • 9.打至硬性发泡
  • 10.将打发好的一半蛋白倒入蛋黄糊内,快速翻拌均匀
  • 11.把搅拌好的面糊倒回到蛋白糊内,快速翻拌均匀
  • 12.将拌匀后的面糊倒入蛋糕模内
  • 13.送入烤箱,170度,中下层,中度上色后转至150度,总时间为35-40分钟
  • 14.烤好后马上取出倒扣在网架上晾凉以防回缩
  • 15.待凉透后脱模取出
  • 16.用刀切三片备用
  • 17.准备表面装饰材料
  • 18.巧克力块用勺子刮出碎片
  • 19.淡奶油里加入细砂糖
  • 20.打发至十分发
  • 21.先取一片蛋糕放在转台上,将奶油均匀涂于蛋糕上,再将二、三两层也同样抹上奶油,重叠盖上
  • 22.在蛋糕周围和顶部涂抹奶油,整体涂抹平整
  • 23.在蛋糕周围洒上杏仁片
  • 24.将剩余奶油放入裱花袋中
  • 25.在蛋糕顶部边缘挤上一圈
  • 26.中间的空余部分洒上巧克力碎
  • 27.用奶油在巧克力碎上均匀挤上八个小圈
  • 28.在奶油上摆入樱桃
  • 29.漂亮的蛋糕完工啦
