这个杏仁小蛋糕,依然用的是海绵蛋糕的方子,做蛋挞多了两个蛋白,也都加进去了,口感更细腻,很蓬松!加了些杏仁片,视觉上要漂亮些,因为要送人,不能光秃秃的,做成纸杯装的,很方便拿取!

  • 1.准备好原料,低筋面粉过筛两次备用;
  • 2.鸡蛋隔热水打至粗泡;
  • 3.一次性放入白糖;
  • 4.先低速后高速打至打蛋头提起来,蛋液不会滴落的程度。(也可以插一根牙签进去,不会倒,就可以了);
  • 5..倒入玉米油,继续搅打均匀;
  • 6.分3次加入过筛低粉,用刮刀轻轻翻拌均匀,不用划圈,避免消泡;
  • 7.翻拌好的蛋糕糊很细腻蓬松;
  • 8.蛋糕糊放入纸杯中,八分满,放入烤盘上,拿起烤盘轻震两下,震掉大气泡,烤箱预热180度5分钟;
  • 9.上面撒入适量杏仁片;
  • 10.放入烤箱,180度,上下火,中下层,25分钟;
  • 11.烤好的蛋糕取出即可食用了!!(蛋糕糊放的太满了,涨发的好高)
