【北京】韭菜摊鸡蛋
鸡蛋炒韭菜,或者韭菜炒鸡蛋,是经典家常菜。特别是开春了,生机勃勃的,更应该多吃韭菜。
以往鸡蛋炒韭菜,我们都分开炒吧?鸡蛋是鸡蛋,韭菜是韭菜。牙口不好的,有时吃韭菜还塞牙。我老头儿说别这么炒了,换个样儿吧。
于是我就用小葱摊鸡蛋的方法,把韭菜切碎放进鸡蛋中,这样鸡蛋炒韭菜就变成了韭菜摊鸡蛋了。
先不说这味道有多香,光看这样儿就让人有食欲。炒得略老一点,外焦里嫩,再也不用担心塞牙了。裹烙饼、夹馒头,不知不觉能多吃两张,多吃两个。
一天到晚嚷着要减肥,估计这么吃要减到猴年马月了!

  • 1.韭菜择洗干净,鸡蛋准备好
  • 2.鸡蛋入盆儿中
  • 3.韭菜切碎
  • 4.将韭菜入鸡蛋液中,加适量盐,搅拌均匀
  • 5.平底煎锅中倒适量油
  • 6.油到7、8成热时,将韭菜鸡蛋液倒入锅中,先别动,待底部定型后再翻身
  • 7.看,下面微微焦黄色,滋滋冒油,倍儿香,待蛋液完全凝固就可出锅
  • 8.好香好香
  • 9.外焦里嫩
