Steps to make 麻辣串串锅

  • 1.顺时针:辣椒粉、辣椒、茴香、花椒粉、花椒、五香粉、蒜瓣(还有郫县豆瓣酱、油豆豉,到放油的时候加进去);
  • 2.倒入3勺左右的油,将这些调味料先用小火煸香;
  • 3.倒入清水;
  • 4.再加入香叶和桂皮(这两样东西没办法和前面那些调料一起煸炒,所以在煮锅底的时候加),最后加入老抽调色;
  • 5.油豆腐、兰花豆干一切二、百叶切成长条、豆干剖成两片后对角切、鹌鹑蛋煮熟去壳,这些准备工作都要事先做好;
  • 6.锅底烧开后把食材都放入锅中,边涮边吃。
