  • 可可粉10g
  • 牛奶55g
  • 香草精3g
  • 泡打粉2g
  • 黄油45g
  • 奶油奶酪160g
  • 糖粉30g
  • 黄油100g
  • 白巧克力80g
  • 淡奶油20g

  • 1.用电动打蛋器将软化的黄油打发1分钟
  • 2.加入30g细砂糖,继续打发2分钟
  • 3.将蛋白,蛋黄分离,蛋白打入无水无油的打蛋盆中备用
  • 4.将蛋黄分两次加入黄油中,混合均匀
  • 5.将面粉,可可粉,泡打粉和盐混合过筛到黄油混合物中
  • 6.用刮刀搅拌均匀
  • 7.牛奶,香草精,柠檬汁,色素混合均匀
  • 8.加入面糊中,搅打均匀
  • 9.70g细砂糖分三次加入蛋白中,用电动打蛋器打发到中性发泡
  • 10.先将1/3的蛋白加入面糊混合物中
  • 11.再将剩下的蛋白倒入面糊,翻拌均匀
  • 12.将油纸铺在烤盘上,“Z”字型倒入面糊
  • 13.轻震几次烤盘,再用刮板将面糊抹平整
  • 14.放入烤箱,上下火180度,烤15-20分钟,取出烤盘,将蛋糕连同油纸一起取出,置于晾架,冷却至室温。另取大张锡纸,表面筛上些许糖粉
  • 15.将蛋糕倒扣在油纸上,撕去烘烤过的油纸
  • 16.卷起蛋糕,定型备用
  • 17.淡奶油隔水加热到45度,加入白巧克力,融化,搅拌均匀
  • 18.已经室温软化好的奶油奶酪加入糖粉,混合搅拌至顺滑
  • 19.将软化的黄油加入奶酪糊中,打发至蓬松
  • 20.再将融化好的巧克力奶油糊倒入,继续混合均匀,做成奶油霜
  • 21. 摊开刚才卷起的蛋糕,将奶油霜均匀涂抹在蛋糕体上
  • 22.包上油纸,再裹一层保鲜膜,冷藏1小时
  • 23.冷藏好的蛋糕卷,切掉两头,撒上糖粉装饰,即可食用
