Steps to make 圣诞饼干

  • 1.无盐黄油提前从冰箱中取出放常温下软化,软化至用手指戳一下立即出现洞的状态;
  • 2.软化好的黄油用电动打蛋器稍微打散;
  • 3.将过筛的糖粉加入到黄油中;
  • 4.先用刮刀翻拌几下,再用电动打蛋器低速打发至黄油出现蓬松的状态。如果不用刮刀翻拌就直接搅打,糖粉容易溅得到处都是;
  • 5.分两次加入鸡蛋液,用打蛋器低速搅打均匀,每次加完搅拌至完全混合均匀再加下一次,这样能有效防止油水分离,即黄油与鸡蛋液不能完全融合到一起的情况;
  • 6.将过筛的低筋面粉加入到打发好的黄油中;
  • 7.用刮刀翻拌至没有干粉的状态,再按压成团;
  • 8.取一半面团放到大号保鲜袋上,再盖上一个大号保鲜袋,用擀面杖轻轻地擀成约3毫米左右厚的面皮,放入冰箱中冷冻半小时左右。剩下的一半面团也采用同样的操作方法擀好放冰箱中冷冻。冷冻后的面皮有一定的硬度,方便用模具印出各种造型;
  • 9.从冰箱中最出冷冻好的面皮,用饼干模具印出饼干造型。饼干模具可以蘸少许干粉,方便脱模。剩下的边皮再重新擀成面皮,继续用模具印出饼干造型,如果面皮太软可以再放冰箱中冷冻至有硬度时操作;
  • 10.各种不同造型的饼干坯子;
  • 11.将做好的饼干坯子放在垫有锡纸或油布的烤盘中,摆放的时候每个饼干之前预留少许空隙;
  • 12.将两个装有饼干坯子的烤盘分别放在烤箱的最上层和最下层,选择空气烤模式,温度为170度,时间为25分钟。快出炉前的5分钟开始注意饼干表面的颜色状态,饼干边缘变金黄色,中间有少许白色即可停止烘烤,关掉电源后继续在烤箱中焖3分钟~5分钟再出炉,这样烤出来的饼干颜色会更加均匀,取出烤盘将饼干放在烤网上晾凉;
  • 13.饼干晾凉后,用牙签在饼干上随意沾少许蜂蜜水,再撒上彩虹糖,让彩红糖粘在蜂蜜水上。蜂蜜水是采用蜂蜜加凉白开水调配的,蜂蜜与开水的比例是2:1。
