可可蛋糕
这是一款可可味十足的半戚风半海绵蛋糕,没有戚风那么湿润但吃起来更可口,像是戚风跟海绵蛋糕的中和版。

  • 鸡蛋5只
  • 细砂糖30g +70g
  • 玉米油60g
  • 纯净水60g
  • 少许

Steps to make 可可蛋糕

  • 1.准备好材料
  • 2.分蛋 准备两个干净的容器将蛋黄与蛋清分离,蛋清里一定不要混有蛋黄会影响打发
  • 3.蛋黄中加入30g细砂糖
  • 4.加入60g水
  • 5.加入30g可可粉(可可粉要提前过筛)
  • 6.用刮刀搅拌至顺滑无颗粒,这一步比较费劲,但一定要搅拌到位。
  • 7.筛入70g低筋面粉,搅拌至无颗粒。蛋糕糊的状态是比平时做的要稠一些不要担心。
  • 8.打发蛋清 打发过程中分三次加入70g糖。打发至图中状态加入三分之一糖
  • 9.打至图中状态 第二次加糖
  • 10.打发至图中状态,第三次加糖
  • 11.蛋糕糊加入三分之一蛋白
  • 12.快速翻拌均匀不要转圈搅拌
  • 13.加入剩下的蛋白翻拌均匀
  • 14.倒入模具震出较大的气泡
  • 15.烤箱提前预热十分钟,我的烤箱是15L的比较小,放入烤箱中下层。(小型烤箱上下火120℃ 烤45分钟 转上下火145℃烤 25分钟)大一点的烤箱中下层 上下火150℃55分钟 上色后可以加盖锡纸
  • 16.取出倒扣晾凉脱模。这一步我总是忍不住所以托模都不太好看
