二月二龙抬头,吃春饼/韭菜鸡蛋饼
二月二同样讲究吃春饼;立春吃春饼叫做“咬春”,而二月二吃春饼则叫做咬“龙鳞”,是因春饼圆且薄的形状好似鳞片而得名。

Steps to make 二月二龙抬头,吃春饼/韭菜鸡蛋饼

  • 1.准备好食材。
  • 2.韭菜提前清理和清洗干净,滤干水分,最好用厨房纸吸干。
  • 3.切成碎末加入花生油搅拌均匀(这样韭菜不会出水)。
  • 4.面粉中加入热水,边加水边搅拌成絮状,然后将面块用手揉成光滑的面团,盖上保鲜膜20分钟。
  • 5.鸡蛋打液,锅中加入适量花生油烧热,将鸡蛋炒成碎粒。
  • 6.钩海米提前用料酒浸泡后,再用开水清洗一下。把鸡蛋和海米放入韭菜中,加入盐和鸡精,五香粉一起混合拌匀待用。
  • 7.准备完毕。
  • 8.把面团分成小面团搓圆压扁用擀面杖擀开,加入韭菜鸡蛋馅料,然后用包馒头的方法包起来(准备少许干面粉防止粘手)。
  • 9.依次一个个包好。
  • 10.准备电饼铛上下加热后刷一层花生油,将韭菜饼一个个放入煎,盖上盖焖煎1分钟左右,然后再翻面煎至面饼变色,熟了即可。
  • 11.装盘上桌开吃。
  • 12.一口咬下,满口鲜香。咬出一年好运气。
