广式蛋黄月饼
月饼是古代中秋祭拜月神的供品,沿传下来,便形成了中秋吃月饼的习俗,是深受中国人民喜爱的传统节日特色美食,月饼的形状圆又圆,又是合家分吃,所以它象征着团圆和睦,是在中秋节这一天的必食之品。

  • 广式月饼预拌粉100克
  • 转化糖浆75克
  • 玉米油25克
  • 咸蛋黄9个
  • 绿豆沙馅150克
  • 红豆沙馅150克
  • 玉米油适量(泡蛋黄)

Steps to make 广式蛋黄月饼

  • 1.咸蛋黄先用玉米油浸泡一到二天
  • 2.准备做月饼需要的材料,转化糖浆是自己熬的
  • 3.转化糖浆和玉米油混合后,搅打至乳化,用花生油最好哈,我家里没有花生油,只好用玉米油代替
  • 4.筛入月饼粉,过不过筛都无所谓的,中式点心没有那么多讲究
  • 5.拌匀后的面团装入保鲜袋中,室温下醒发2个小时左右
  • 6.泡好的蛋黄放入烤箱,170度烤8分钟左右
  • 7.分好豆沙馅搓圆,一个约35克,月饼皮一个23克左右
  • 8.豆沙馅包住蛋黄,依次包好所有的蛋黄
  • 9.月饼皮压扁抱住馅料,用手往上推包好收口
  • 10.月饼放入淀粉中滚一下沾粉
  • 11.月饼摆放在烤盘上,用模具中压出花纹
  • 12.一个蛋黄,一小勺蛋清,一大勺水,调成刷面用的蛋黄水
  • 13.烤箱以上下管均200度预热,烤盘放入预热后的烤箱中层,先烤5分钟
  • 14.5分钟后取出烤盘,月饼表面刷薄薄的一层蛋黄水,放入烤箱继续烘烤15分钟左右
  • 15.烤好的月饼放凉后,装入盒中等待回油,一天后就可以吃
