麻辣鸡胗鸡心
一不用烤、二不用油炸,轻松就能做出烧烤味的麻辣鸡胗鸡心!

  • 白糖1茶匙
  • 八角2粒
  • 香叶3片

Steps to make 麻辣鸡胗鸡心

  • 1.鸡胗650克、鸡心500克、白芝麻适量(熟)调料:麻辣火锅底料30克、辣椒粉1茶匙、花椒粉1茶匙、孜然粉1茶匙、孜然粒1茶匙、白糖1茶匙、花椒粒适量、麻椒粒适量、姜片适量、葱段适量、八角2粒、香叶3片。
  • 2.处理这个鸡心需要点耐心。新鲜的鸡心,去掉油脂,从中间剪开,洗干净藏在里边的血块,用流动的自来水冲洗,冲去粘在鸡心上边的脏东西。鸡胗也清洗干净,撕掉里边残留的黄色筋膜,大块可以切开。(如果鸡胗比较大可以切开或者打上十字花刀)。
  • 3.鸡胗鸡心处理干净。冷水下锅,放葱段、姜片,八角,香叶、花椒,麻椒,料酒,大火烧沸,撇去浮沫,改中小火煮15分钟左右。
  • 4.煮熟的鸡胗鸡肝捞出,控干水份,挑出里边的葱姜等调料备用。
  • 5.炒锅中放少许食用油,加入孜然粒、麻辣火锅底料,小火炒出香味后加入少许水。
  • 6.放入鸡胗鸡心,略略翻炒均匀。
  • 7.炒匀后依次加入辣椒粉、花椒粉、孜然粉、白糖、生抽等调料。
  • 8.加入所有调料后中火慢慢翻炒,让花椒粉、辣椒粉、孜然粉等麻辣味慢慢地渗到鸡胗鸡肝里去……,起锅的时候,再丢一把白芝麻增香即可。
  • 9.出锅喽! 味道超级棒!麻辣味浓,越吃越过瘾。
