Steps to make 成都凉面

  • 1.首先是做肉臊子,先在锅中入油,放入干辣椒和花椒炒一下;
  • 2.放肉糜略煎一下,倒入甜面酱;
  • 3.再加入酱油;
  • 4.翻炒均匀,加水中火煮15分钟;
  • 5.加小葱末翻炒均匀;
  • 6.加少许盐炒匀,大火收汁盛出,肉臊子就做好了;
  • 7.黄瓜切丝,豆芽焯水、独头蒜剁蒜泥备用;
  • 8.辣椒面加滚油制成辣椒油,芝麻酱调好,这样拌凉面的材料就备齐了;
  • 9.锅中烧水,下面条,过两道冷水煮好捞出;
  • 10.煮好的面条倒入一些熟油拌匀吹凉;
  • 11.面条略凉后加入辣椒油、花椒面、蒜泥、芝麻酱、白糖、豆芽、黄瓜丝、肉臊子,拌匀就可以了。这就是又辣又麻又甜的成都凉面。
