好吃看得见——卤肉米线/卤米线
卤肉米线也叫卤米线,记得上高中时,学校边的小店都有卖的,有时当早点吃,有时不回家吃饭就当饭吃,反正在家时不知道吃了多少米线了。什么三鲜米线,小锅米线,砂锅米线,焖肉米线,卤米线,过桥米线,酸辣米线等等,还有个我当时最爱吃的米线是羊肉米线,记得有家叫“六盘水羊肉米线”的做的很好吃,嘿嘿。
今天这个卤米线最重要的当然就是卤肉了,卤肉的味道决定了米线的味道,不过米线的质地也是很重要的。可惜我这里吃不到新鲜的。呵呵。

    Steps to make 好吃看得见——卤肉米线/卤米线

    • 1.带肥肉的猪肉洗净,切1厘米左右大的小丁。
    • 2.姜蒜切末,丁香少许(性热,少放,多了香味太浓夺味)。
    • 3.锅里热少许油(不要太多,肥肉会出油),放入姜蒜末、丁香翻炒。
    • 4.下辣椒粉,翻炒均匀。
    • 5.下肉丁,放入四匙白糖,翻炒几分钟,让肥肉炒出些油。
    • 6.肉丁看起来不那么肥的时候,调入一大勺(汤勺)酱油,两大勺料酒,适量盐,鸡精,黑胡椒粉,花椒粉,五香粉,翻炒一会儿。
    • 7.炒两分钟左右,加入少许水,拌匀,盖上锅盖,转小火焖40-60分钟即可。
    • 8.留汤汁,别收干了(火大容易收干)。可以出锅了。
    • 9.葱切葱花,干米线煮软捞出(煮到可以直接吃的程度),有新鲜米线更好,舀上几勺卤好的肉,加几勺汤汁,撒上葱花,加少许盐就可以吃了。
    • 10.也可以撒上些花生碎,味道更好。
