香橙戚风奶油蛋糕卷
赣南脐橙上市啦!皮薄肉多汁甜,只是生吃还不过瘾。于是就想把它和蛋糕结合在一起。事实证明还真不错!

  • 蛋糕粉75克
  • 蛋白3个
  • 蛋白用细砂糖45克
  • 蛋黄3个
  • 蛋黄用细砂糖15克
  • 蛋黄糊用鲜橙汁50克
  • 玉米油40克
  • 1克
  • 淡奶油250克
  • 淡奶油用细砂糖40克
  • 淡奶油用鲜橙汁30克
  • 鲜橙片6片

Steps to make 香橙戚风奶油蛋糕卷

  • 1.脐橙切成薄薄的片
  • 2.一层白糖一片橙,码放在碗中,倒入清水没过橙片,开水锅中盖盖蒸20分钟
  • 3.晾凉备用
  • 4.鲜橙汁准备好(分别用在蛋黄糊中和淡奶油中)
  • 5.蛋白蛋黄分离
  • 6.蛋黄打散分两次加入细砂糖,搅拌均匀,并打发蛋黄略发白膨胀
  • 7.加入鲜橙汁和玉米油,混合均匀
  • 8.筛入蛋糕粉,搅拌均匀至无干粉
  • 9.蛋白中分三次加入细砂糖,将蛋白打发至9成发的样子,提起打蛋头,蛋白呈大弯勾状
  • 10.三分之一蛋白糊入蛋黄糊中,翻拌均匀,再将剩下的蛋白糊分两次加入蛋黄糊中,翻拌均匀
  • 11.拌好的蛋糕糊细腻光滑
  • 12.提前将煮好晾凉的橙片取出,用厨房用纸吸干水,铺在烤盘油纸上
  • 13.倒入蛋糕糊,抹平,轻震两大,震出大气泡
  • 14.入提前预热好的烤箱,上火180度,下火160度,中层,18分钟
  • 15.取出,连油纸一起拖到晾架上,将周边的油纸撕开,表面上再覆一张干净油纸
  • 16.5分钟后,翻面,撕去油纸,再盖上,这个时候去打淡奶油
  • 17.淡奶油要提前24小时冷藏,加细砂糖打发到6、7成发时,加入30克鲜橙汁,继续打发
  • 18.奶油打发好
  • 19.蛋糕片再次翻面,正面朝上,抹上打发好的奶油,铺上事先切好的鲜橙丁
  • 20.卷成卷
  • 21.油纸包好,两边用夹子夹紧,入冰箱冷藏30分钟以上再取出切块食用
  • 22.看着还真不错
