小兔子奶油蛋糕卷
依呀属兔子的,所以我经常会用兔子来做造型。依呀很喜欢这个蛋糕卷,因为上面画了只可爱的兔子,她还让我一定不要把兔子切开,说太可惜了,哈哈。

  • 牛奶50g
  • 白砂糖(入蛋黄)10g
  • 白砂糖(入蛋白)60g

Steps to make 小兔子奶油蛋糕卷

  • 1.准备材料(我这里只拍了主要的)
  • 2.蛋黄和蛋白分离
  • 3.蛋黄中加入白砂糖,分三次加入色拉油搅拌均匀,再加入牛奶搅拌均匀
  • 4.低粉过筛入蛋黄糊,搅拌均匀
  • 5.打发蛋白至很多鱼眼泡时加入一半的白砂糖,打至泡泡都很细小均匀时加入另一半的白砂糖,继续打至湿性泡发(提起打蛋器蛋白尖角变弯)
  • 6.分三次把打发好的蛋白倒入蛋黄糊中,上下翻拌均匀
  • 7.分别舀两三勺蛋糊,加入红、绿、黄色素(这时可以先把烤箱180度预热)
  • 8.拌好之后分别装进裱花袋,再装一个原色的蛋糊
  • 9.可以在油纸上用笔画好兔子的形状,然后把油纸反过来,用原色面糊画好兔子的内耳,烤箱烤40秒
  • 10.内耳定型之后,拿出,用各种的颜色画好兔子和胡萝卜,烤箱烤1分钟
  • 11.定型后,拿出,倒入原色的面糊,抹平,烤箱18分钟
  • 12.烤的时候,可打发淡奶油
  • 13.烤好后,拿出,铺在另一张油纸上,趁热撕去原来的油纸
  • 14.晾凉,再反过来,在没有图案的一面抹上淡奶油
  • 15.卷起来,包上油纸,入冰箱冷藏定型
  • 16.定好型,可以拿出来,用融化的黑巧克力画上眼睛
