上海风味——排骨年糕
排骨年糕这道小吃,在上海随处可见,超大的一块大排,加上两三片大大的年糕,配上上海风味浓油赤酱微甜的蘸料,只要十几块管饱又过瘾!

    做这个也是因为老耿这个上海人的胃,老是馋这口,吃过一次发现这东西技术难度不高,尝试着做了点,自我的感觉和外面的差不了多少,除了大排外面的面糊比卖的那个少点,还真没什么区别!!

Steps to make 上海风味——排骨年糕

  • 1.准备好原料。
  • 2.大排洗净,用刀背剁松。
  • 3.剁好的大排加盐,鸡精,料酒,葱,姜抓匀腌制。
  • 4.生粉和面粉 按1:1的比例配好加鸡蛋,盐,水调匀成面糊,腌制好的大排 裹上面糊。
  • 5.裹好面糊的大排下油锅小火炸定型,捞出放凉再大火炸一遍。
  • 6.年糕油锅炸熟。
  • 7.高汤加老抽调色,生抽,盐,糖调好味烧烤加少许水淀粉勾芡。
  • 8.加入炸好的大排和年糕就可以!
