杭州人的叫法吧,按我这里的叫法,这汤面应该叫雪菜肉片面了,片儿川的原料很平凡,就是猪肉片,冬笋片,雪菜和潮面,我用茭白片代替了笋片,据说片儿川的面是配料先在油里炒加水烧开后,直接是生面下入锅中的,这样才是正宗的片儿川做法,还得用上高汤,不过我家里做的汤面能简化的就简化掉了,哪能像面馆讲究哩

    Steps to make 家常片儿川

    • 1.所有材料。
    • 2.葱姜蒜切末,茭白切片,猪肉切片用淀粉、生抽腌制15分钟。
    • 3.热锅冷油,下入葱姜蒜。
    • 4.下入肉片,翻炒几下,等肉片转色时,盛出备用。
    • 5.肉片盛出后,锅里的余油用来炒茭白、雪菜。
    • 6.一次性加足水煮沸。
    • 7.另一个锅,水烧开,加入面条焯一下,直接将焯过水的面条放入烧开的配料锅中。
    • 8.加入肉片、盐、生油、鸡精即可。
    • 9.肉片鲜嫩,雪菜茭白片色泽翠白分明,食之鲜美爽口,比较适合清淡口味滴。
    • 10.这个我滴,放了一点点的牛肉辣酱。
