抄手是四川人对馄饨的称呼,馄饨在全国各地均有制作,红油抄手是最为著名的品种之一。红油抄手是四川的汉族特色小吃。属于川菜系,此种小吃柔嫩鲜美,汤汁微辣浓香。
其实红油抄手可以带汤汁的,也可以干拌的,两种味道都不错。自己做的油辣子特别香,色泽也特别红亮,非常诱人食欲。

  • 玉米淀粉2g

  • 味极鲜酱油2g
  • 花椒粉0.5g

Steps to make #信任之美#红油抄手

  • 1.备好食材:猪肉末和馄饨皮
  • 2.葱花和姜末
  • 3.肉末中放入1g盐、5g葱花、5g姜末、2g生抽、3g玉米油、2g玉米淀粉、少许鸡精和少许白胡椒粉,顺一个方向搅拌均匀备用
  • 4.开始包抄手,取一张馄饨皮,将肉馅放在一个角上
  • 5.皮卷起
  • 6.卷好后,在皮的一端抹点清水
  • 7.将另一端折过去
  • 8.两端交错合在一起,并将封口捏紧即可
  • 9.制作红油调料:碗中放入蒜末、2g鲜酱油、1g醋、10g油辣子和少许花椒粉
  • 10.抄手包好后下入沸水中
  • 11.大火煮至抄手浮起,再煮一小会即可捞出(用汤勺连汤带抄手舀到调料碗里)
  • 12.撒一点葱花拌匀就可开吃啦
