苏式椒盐月饼
中秋马上就要到了,做一份可口的椒盐月饼送给家人以表达心意吧!
这种酥皮的月饼属于苏式月饼,主要由面粉和猪油做成,不像广式月饼那样还要陈年的转化糖浆和枧水,原料比较好凑集,但是要通过多次折叠的方法才能做出酥脆的口感,所以为了口感可不要偷懒哦~~

  • 花椒粉5g
  • 食盐8g
  • 黑芝麻粉5g
  • 玫瑰酱1勺

Steps to make 苏式椒盐月饼

  • 1.先说说椒盐馅的制作,150g面粉放到小锅里面小火炒熟但是不要太黄了;
  • 2.花椒去掉里面黑色的籽,打成花椒粉
  • 3.找一个大点的盆,放进去花椒粉5g
  • 4.加入食盐和炒熟的面粉
  • 5.倒进去花生油,加一勺玫瑰酱搅拌均匀
  • 6.油酥原料:面粉100g,猪油50g,和成面团
  • 7.水油皮原料:面粉100g、猪油30g、温水50g、盐3克,和成面团
  • 8.油酥和水油皮分成8个均等的小剂子,其中油酥18g左右,水油皮23g左右
  • 9.取一个油皮面团,包上油酥面团
  • 10.揉成长条,擀开
  • 11.从上到下卷起来,放在一旁静置15分钟
  • 12.静置好的卷竖着放,再次擀开
  • 13.再次从上向下卷起来,静置15分钟
  • 14.最后一次放竖直,擀开从上到下卷起来,静置15分钟
  • 15.从上到下卷起来,静置15分钟最后两手把卷对折一下,按成剂子
  • 16.最后两手把卷对折一下,按成剂子
  • 17.之前做好的椒盐馅分成25g一个
  • 18.在剂子里面放上椒盐馅,收口向下放在烤盘上
  • 19.上下火中层,180度15分钟差不多可以了,因为馅料都是熟的嘛~为了好看也可以点一个红点哦
