巧克力纸杯蛋糕

  • 无糖可可粉15克
  • 柠檬汁几滴
  • 细砂糖15克(奶油中)
  • 低筋面粉40克
  • 牛奶40克
  • 细砂糖80克
  • 淡奶油200毫升
  • 可可粉18克(奶油中)

Steps to make 巧克力纸杯蛋糕

  • 1.准备食材。
  • 2.将蛋清和蛋黄分离。
  • 3.往蛋黄里加入细沙糖,用电动打蛋器低速打散,打至糖融化即可。
  • 4.分三次加入牛奶与色拉油,搅拌匀均。
  • 5.筛入可可粉与面粉。
  • 6.用橡皮刀轻轻翻拌匀均。
  • 7.将烤箱预热,180度预热10分钟。
  • 8.将蛋清打发。
  • 9.将1/3的蛋白放入面糊中,用橡皮刮刀轻轻把蛋白和面糊翻拌匀均(从底部往上翻,不要划圈搅拌,以免蛋白消泡)。
  • 10.继续将1/3的蛋白放入面糊中翻拌匀均。
  • 11.将剩下的1/3的蛋白放入面糊中整体翻拌匀均。
  • 12.将面糊倒入纸杯模具里, 然后放入烤箱,180度上下火烤25分钟。
  • 13.淡奶油加细砂糖、可可粉打发至裱花状态。
  • 14.将奶油装入裱花袋中,用星形裱花嘴把奶油挤到纸杯蛋糕上,点上少许装饰糖即可。
