温州敲鱼汤
三丝敲鱼是温州民间传统佳肴,相传在清道光年间,有人乘船去福建办事,发现渔船旁有许多黄色的鱼,鳞光闪闪,原来是渔翁捕捞上来的黄鱼。于是将鱼去头、剥皮、挖内脏,再将鱼肉剁成片片,放在船舷上,用木槌将鱼肉捶打成片片薄饼状的圆片,放在船上晾晒干。船上的渔翁把这些“鱼片”剪丝煮汤,没想到美味异常。此后,渔翁仿照此法,制成敲鱼,逢人诉说。久而久之,敲鱼就成了家家户户的菜肴,温州敲鱼就这样被流传下来,成为著名的瓯菜之一。三丝加清汤烹制而成的“三丝敲鱼”,汤清味醇、鲜嫩爽滑,色泽调和,独具风味。

   免鱼是温州最家常的一种鱼,味质鲜美,肉多无细刺,所以温州人经常拿它来做鱼丸、敲鱼之类,当然也有用黄鱼做的。想起小时候,爸爸经常让我帮他敲鱼,还有专用的敲鱼锤子的,没有工具的用个啤酒瓶代替,现在市场上有现成的敲鱼皮卖了,也很少人在家做了,很想念家乡的味道,所以今天我买了比较大的免鱼段,这样取鱼肉就比较方便了!

    Steps to make 温州敲鱼汤

    • 1.将免鱼段洗净
    • 2.去骨取鱼肉备用,因为是大鱼,只要割一割就是现成的鱼肉
    • 3.拿一包木薯淀粉,也可以是普通淀粉
    • 4.案板上撒少许淀粉,取一块鱼肉裹上淀粉。
    • 5.拿出一个啤酒瓶洗净,在上面抹点淀粉,敲打鱼肉鱼成薄片,一般敲成圆形的片
    • 6.全部敲好的鱼片
    • 7.锅里冷水烧开放入敲鱼片滚开后即可捞出放入冷水里,烧的时候切成条状。
    • 8.温州传统的三丝应该是胡萝卜、泡发香菇、青菜丝,我今天就地取材,有胡萝卜丝、笋丝、蘑菇片、菠菜叶
    • 9.起油锅,先炒胡萝卜丝、笋丝,再放入蘑菇片炒一下,放水,加入盐,白糖、料酒,再放入几片菠菜叶
    • 10.倒入切好的敲鱼丝打个滚,再加入胡椒粉关火加入鸡精、葱即可
