洋葱炒鳝丝
黄鳝俗称鳝鱼、田鳝或田鳗,为温热带的淡水底栖生活鱼类。它肉质细嫩,营养丰富,6-8月的黄鳝最肥,以小暑前后者最佳,民间有“小暑黄鳝赛人参”的说法,7月7日即是小暑,所以此时正是吃黄鳝的好季节。

  • 料酒1茶匙
  • 白糖2茶匙
  • 白胡椒粉1g

Steps to make 洋葱炒鳝丝

  • 1.鳝丝放入清水中浸泡约10分钟,切成细长的丝,洋葱洗净切丝。
  • 2.锅中放入油,烧至五成热后倒入鳝丝,不停地翻炒以防糊锅。再倒入洋葱丝。
  • 3.将鳝丝和洋葱丝大火翻炒一分钟;
  • 4.再加入料酒、 生抽酱油和白糖翻炒均匀,转盘时撒上白胡椒粉即可。
