  • 1.花鲢尾把两边背部的肉片下来清洗干净,这一步可让卖家帮忙
  • 2.用勺子把背上鱼白的肉刮下来,鱼红肉不要,影响成品颜色
  • 3.去掉里面的筋膜,不小心刮进去的鱼刺也清除掉
  • 4.猪肥肉剁成蓉
  • 5.两个鸡蛋把蛋黄蛋清分开磕入碗中
  • 6.小葱清洗干净,取葱白切碎
  • 7.生姜切成蓉
  • 8.把生姜用开水泡一两分钟
  • 9.取一大碗,放入鱼蓉、葱末和鸡蛋清顺时针搅拌
  • 10.边搅拌边把生姜水分次加入
  • 11.搅拌成糊状
  • 12.放入盐和玉米淀粉继续顺时针搅拌上劲,搅拌至粘稠,搅起来筷子有些吃力就可以了
  • 13.放入猪肥肉蓉搅拌均匀
  • 14.把容器四边和底刷上一层油
  • 15.把鱼蓉倒入,用刮刀或勺子抹平整
  • 16.封上保鲜膜,用牙签扎几个洞
  • 17.蒸锅中放入足量的水,放入蒸锅中盖上锅盖蒸半小时关火
  • 18.把鸡蛋黄打散
  • 19.蒸好半小时后撕去保鲜膜,把蛋黄均匀的刷在上面,在开火盖上锅盖蒸三分钟关火
  • 20.冷却后扣在熟食菜板上切成片,可以煮汤、炒菜、即食都好吃
