剔骨肉拌黄瓜
犹如“人不可貌相”,吃菜也不能光看菜名。有些菜菜名普通、甚至不好听,吃起来,味道口感却毫不含糊!比如北方人盛夏餐桌上必不可少的“拍黄瓜”,听起来再平常不过,但却几乎家家离不了它。

“拍黄瓜”的好处在于——

做法上:配料简单,调味简单;搭配随意,可荤可素;信手拈来、毫不费神;

味道上:清脆爽口,酸辣咸鲜,无论下酒还是送饭,都是当仁不让的夏季好凉菜。

Details of ingredients

  • 肋排骨4根
  • 粉皮1张
  • 葱白一段
  • 绿尖椒1个
  • 米醋3或4大勺
  • 芝麻香油1小勺
  • 黄瓜2根
  • 大蒜5瓣
  • 生姜1小块儿
  • 香菜1棵
  • 生抽2或3大勺
  • 白糖1大勺

Steps to make 剔骨肉拌黄瓜

  • 1.将猪肋排骨煮成盐水排骨,在汤汁中浸泡至凉;
  • 2.捞出凉透的排骨,剔去骨头;
  • 3.将排骨肉切成2、3cm的小段儿;
  • 4.黄瓜洗净,切去头尾,平刀稍用力拍至裂开;
  • 5.再切成2、3cm的小段;
  • 6.粉皮温水泡软,洗净撕成适口的小片儿;
  • 7.葱、姜、蒜、香菜、青椒分别切成末;
  • 8.将排骨肉、黄瓜段、粉皮、葱姜蒜末、香菜末和青椒末统统放进大碗;
  • 9.米醋、酱油、香油和白糖放进小碗,调成三合油味汁;
  • 10.将味汁倒入大碗中;
  • 11.从下往上翻拌均匀,尝尝味道,加入适量盐调味儿;
  • 12.最后再视口味和需要,加入适量油辣椒,拌匀装盘,即可。
