洛阳卤面
在洛阳有一种民间市井小食“卤面”,有一段传说,在很久以前,洛阳城东有一座寺庙叫“白马寺”,香火极盛,每天来上香拜佛的人很多,远路来的赶不及回去,就在路边小摊吃饭,当时街两边有很多的人家在卖这种面食,由于在路摊叫卖的原因,时间长了,大家就管这种小吃叫“路面(卤面谐音)”。

Steps to make 洛阳卤面

  • 1.准备材料:豆角蒜薹切段,葱切段,姜蒜切片,肉切成肉丝
  • 2.锅烧热,放入切好的连皮的肥肉,煸炒出油,捞出
  • 3.放入葱姜蒜干辣椒爆香,放入肉丝略炒,倒入一点点老抽上色,然后放入十三香、豆豉辣酱翻炒
  • 4.放入豆角炒一会,再放入蒜薹、盐、生抽炒几分钟
  • 5.倒入1碗水炒至菜八成熟,最后加入鸡精
  • 6.蒸锅加水烧开,放入抖的松散的面条,蒸约10分钟
  • 7.把面条拿出放入容器中,倒入少许色拉油拌开,以防粘连
  • 8.把面条放入炒锅中和菜拌匀
  • 9.再移到蒸锅中,蒸约10分钟即可
  • 10.端起盘子,开吃!
