水果泡芙
泡芙是源自意大利的甜食。蓬松张孔的奶油面皮中包裹掼奶油、巧克力乃至冰淇淋。有人说:因为奶油和蛋糕走进了婚礼的殿堂,所以有了奶油蛋糕。而深爱着奶油的面包只能把爱埋在心里,变成了一只泡芙。

  • 低筋面粉60克
  • 无盐黄油45克
  • 牛奶100毫升
  • 鸡蛋2枚
  • 少许
  • 砂糖少许
  • 淡奶油150克
  • 砂糖15克

Steps to make 水果泡芙

  • 1.黄油切小块加入水、盐、细砂糖,加热至沸腾离火。
  • 2.一次性倒入过筛的面粉,快速搅拌。
  • 3.拌匀后再次开火,用中火,边加热边搅拌,直至锅底出现一层薄膜,关火。
  • 4.晾至不烫手时,分4次倒入全蛋液;舀起的面糊缓慢落下时形成倒三角形状即可。
  • 5.将面糊装入裱花袋中,用裱花嘴挤到烤盘上,排列的时候之间要有空隙,因为泡芙会膨胀。
  • 6.烤箱预热200度、上下火、烤25-30分钟,直至表面上色,并且膨胀直挺为止,关火继续焖5分钟。
  • 7.出炉后静置凉透。
  • 8.淡奶油冷藏12小时以上,取出摇匀倒入无水无油容器中,加入15克砂糖中速打至8-9成发。
  • 9.将泡芙横刀切开,挤入适量的奶油,夹上切好的水果丁即可。
