Steps to make Black Swan Puff

  • 1. Mix low gluten flour and black cocoa powder in advance and sieve for later use.
  • 2. Put milk, salt, sugar, and butter into a stainless steel small milk pot. I added 15 grams of sugar because black cocoa powder is bitter.
  • 3. Bring to a boil over low heat.
  • 4. Pour in the sieved powder mixture and stir quickly.
  • 5. Cook over low heat until the dough becomes a ball, stirring continuously until the dough is completely cooked. Boil on low heat for about one minute.
  • 6. Remove from heat and pour the dough into a mixing bowl. First, pour a portion of the beaten egg mixture into the bowl and stir quickly until evenly mixed.
  • 7. Mix well at once and add the next time. Just lift the scraper batter and shape it into an inverted triangle.
  • 8. It's not necessarily necessary to add all the egg mixture. During the addition process, observe at any time. The amount of egg mixture added is related to the degree of batter gelatinization. There is still so much left for my two eggs. Observing it as an inverted triangle is sufficient, and even slight differences in state are not a problem.
  • 9. Take some batter and put it into a decorative bag. I'm using a small round mouth with a diameter of 3 millimeters. Don't make it too big, it will expand after baking, and if the swan's neck is too thick, it won't look good. Alternatively, you can simply cut a small opening in the floral bag.
  • 10. Squeeze two characters in front and back on the baking tray. It is better to have a larger and longer curvature in the upper part.
  • 11. Send to the preheated ACA oven. Bake at 180 degrees Celsius for 13 minutes.
  • 12. Use the remaining batter to make the swan's body. I use a medium eight tooth flower mouth. Decorated bags with cut edges are also acceptable. Squeeze water droplets on the baking tray.
  • The middle layer of the ACA oven was roasted at 190 degrees Celsius and 180 degrees Celsius for 33 minutes. The specific temperature and time depend on your own oven.
  • 14. Cream, sugar, and crushed Oreo cookies to beat
  • 15. Dip a toothpick in a bit of melted white chocolate to point out the eyes of the roasted swan neck, and I also pointed my mouth with strawberry flavored chocolate. Anything that is not available can be omitted.
  • 16. The body part of the swan is sliced open from the middle, and the upper part is cut in half to make swan wings.
  • 17. Squeeze on the Oreo cream filling. Squeeze the tail slightly higher.
