荔芋扣肉

Steps to make 荔芋扣肉

  • 1.将五花肉切成等长的条, 下入冷中煮, 同时加入几片姜和少许高度白酒一起煮;
  • 2. 煮至筷子很容易插入进去后拿出来;
  • 3. 用叉子在肉皮表面叉些小孔;
  • 4. 趁热在表皮上刷层蜂蜜和少许盐;
  • 5. 烧锅油,油六七成热时将表皮朝下放入里面炸至金黄后捞出;
  • 6. 再将切成同样大小块的荔浦芋头也放入里面去炸;
  • 7.将五花肉和荔浦芋头都炸至金黄后捞出;
  • 8. 将切片的五花肉和芋头块中放入腐乳汁、生抽、料酒、姜末、白糖、胡椒粉和适量盐,拌均匀后腌制一下;
  • 9. 腌制好的肉片和芋头片相隔,并且肉片朝下码放好在碗中, 再将腌制的汤汁也倒入里面;
  • 10. 摆放好的芋头扣肉放入高压锅中,上面扣上一个盘,气阀叫后转小火20分钟;
  • 11. 西兰花放入盐和几滴油的开水中焯一下;
  • 12.将蒸好的芋投扣肉倒扣在盘子中,
  • 13. 四周都围上焯好的西兰花, 表面上撒些小葱末;
  • 14. 热气腾腾上桌了。
